Legalizing documents for China is relatively easy, if done correctly.
First, your documents need to be notarized by a Canadian notary and then authenticated by Official Document Services. You can read more about the Official Document Services process

Before you arrive at the Chinese Consulate, be sure to fill out and print off an "Application Form of Consular Legalization of the Embassy/Consulate of the People's Republic of China". You can find the required document
here!
You must also bring the following documents:
- Your original passport as well as a photocopy of the photo page.
- If you are legalizing a document on behalf of someone else, you will need a photocopy of the person's passport as well as a photocopy of your passport (and the original!).
You do not need an appointment for legalization at the Chinese Consulate in Toronto. However, the Chinese Consulate does have a standard 4 day processing time so be prepared to wait. The Chinese Consulate accepts debit/credit and the fees for the standard legalization are as follows:
- Civil Documents (passport, birth certificate etc): $30 (plus additional fees)
- Commercial Documents (any document related to businesses): $60 (plus additional fees)
If you require rush service, there are additional fees.
